Spiced Pork With Apples and Shallots

Recipe: Spiced Pork Tenderloin with Sautéed Apples

A family favorite! This recipe is simple to make, full of flavor, gluten free, and loved by most kiddos (though I still have to separate the pork from the apples when serving my little dudes). I usually serve it with rice (any flavor but spicy saffron is my favorite) and a small salad. I originally saw this in a Cooking Light magazine back in 2010. I lost the magazine over a few years back and had to search online. Luckily, had it available here.
