Spiced Pork With Apples and Shallots

Recipe: Spiced Pork Tenderloin with Sautéed Apples

A family favorite! This recipe is simple to make, full of flavor, gluten free, and loved by most kiddos (though I still have to separate the pork from the apples when serving my little dudes). I usually serve it with rice (any flavor but spicy saffron is my favorite) and a small salad. I originally saw this in a Cooking Light magazine back in 2010. I lost the magazine over a few years back and had to search online. Luckily, MyRecipes.com had it available here.
3/8 teaspoon salt
1/4 teaspoon ground coriander
1/4 teaspoon freshly ground black pepper
1/8 teaspoon ground cinnamon
1/8 teaspoon ground nutmeg
1 pound pork tenderloin, trimmed and cut crosswise into 12 pieces
Cooking spray
2 tablespoons butter
2 cups thinly sliced unpeeled Braeburn or Gala apple
1/3 cup thinly sliced shallots
1/8 teaspoon salt
1/4 cup apple cider
1 teaspoon fresh thyme leaves
